First, user research is the user in user centered design and user experience because it's the most common way to involve the people who use technology in the design process. It's not the only way, but it is the most common and widely used. This essentially means that without research, there is no user centered design. And that also means there's no UX.
If you're not doing research, you're not doing UX, end of story.

Research consists of well organized activities that are carefully designed to answer research questions. That is, the things we want to learn about. For example, usability testing is a research method and so is interviewing.

2. Understanding users’ context of use
Second, user research is the means by which designers learn about the context of use. The context of use is the environment and conditions in which a product or design will be used. Understanding the context of use is absolutely crucial to UX design. This is because technology does not exist in a vacuum. It's always used by certain people and embedded in a certain context.
